Wild Rice Stuffing

Ingredients:
2/3 cup McFadden Farm wild rice
1 cup water
2 cups chicken stock
4 slices bacon
3 cloves McFadden Farm garlic, minced
1 medium onion, chopped
½ lb mushrooms, sliced
1 tsp McFadden Farm oregano
½ tsp McFadden Farm sage
4 ribs celery, chopped
1 cup bread crumbs
¼ to ½ cup chicken broth

Directions:
Bring water and stock to boil. Pour in wild rice. Boil until grains pop open, approx. 40 minutes. Meanwhile, cut bacon into 1 inch pieces, fry until crisp and add garlic, celery and mushrooms. Saute 10 minutes and set aside. When wild rice is done, drain. Combine wild rice and bacon mixture, oregano and sage. Add bread crumbs and stir in enough chicken broth to moisten.

Yield: enough to stuff a 10-15 lb turkey.
